If I only had four reference books in my kitchen, they'd be: 1. Timing Is Everything 2. The Flavor Bible. 3. Some kind of exhaustive field guide to the grocery store which I haven't yet identified. and 4. The Food Substitutions Bible. It is what it says it is. If you don't have a rangpur, also known as a "mandarin lime," you could swap it out for a calamondin. Or a lemon. Or a lime. Or a half lime plus a quarter mandarin orange, blood orange, or navel orange. For marionberries, you can swap black [...]
The book, The Food Substitutions Bible by David Joachim is so large and full of substitiutions! This book is full of wonderful ideas and choices when you don't have the certain ingredient on hand or maybe need a similar flavor to a recipe instead of something your allergic too or can't digest. For me, I can use this for so many different recipes and find a similar or even better flavor with a new ingredient. The best part is that if I don't know too much of the flavor difference to certain foods [...]
The Food Substitutions Bible is a must have resource for every kitchen. This huge book has more than 5000 entries which not only includes ingredients from abalone to zwieback but also cooking equipment and techniques. Each entry gives a little explanation of what the ingredient is or the equipment does, including alternate names. This aspect is quite useful for some of the less commonly known ingredients that the reader has probably never even heard of. As the title of the book suggests, each en [...]
A reference book for the kitchen. I hesitate to say that I have "read" it but I turn to it for information again and again. (I keep it beside my chair while watching Chopped.) Plus, I often flip through looking at different entries (more than 6500 listed), many of which are foods I never heard of previously. Not only does it give suggestions for food substitutions but explains what the ingredients are and what they are used for, gives alternative names for items (the recipe name for an ingredien [...]
Running out of an ingredient when you cook or bake can be frustrating. Last minute change ups don’t bother David Joachim. In fact he’s an expert at it. In his new book, The Food Substitutions Bible, Joachim offers more than 6500 practical substitutions for just such an occasion. He doesn’t stop there. The book goes on to give substitutions for equipment and techniques in the kitchen. Joachim shares his ideas for what to do if you’re out of for example, pastry bags. You can use a plastic [...]
Quite disappointing. While the book is huge and encompasses a lot of ingredients and absurdly rare foodie/gourmet concerns -- who knew you could substitute rambutans for leechee nuts in an emergency? -- it does not even touch on super-common situations, like how to make your dinner taste like something when the kids will absolutely not eat onions, or what to use instead of milk or cream when a diner is allergic to dairy. There are also finer shades missing -- like the fact that flaxseed eggs, of [...]
Well, no I haven't actually read it cover to cover. it is a reference book more than a reading book after all.I have browsed, sampled it, and delved into it so much that it is quickly approaching the status of good friend however. Quite simply, it is jam packed with creative solutions to the constant problem of having all the ingredients to a recipe but one.Well laid out, sometimes creative, and always worthwhile the book is allowing me to move well beyond just thinking about cooking and actuall [...]
An excellent comprehensive reference that would be an especially good help when cooking from older recipes that have outdated ingredients. Many of the suggestions were common sense replacements, so this might be a better reference for a novice cook. I had to laugh at some of the entries though - it seemed the substitution was more obscure than the ingredient it could replace I guess it's good to be thorough.
A few weeks ago I had never heard of The Food Substitutions Bible now that I have I'm a) disappointed I had to return my copy to the library and b) wondering how I survived life in the kitchen before then. This book is so clever and so useful. Just about an ingredient you can think of has an alternate and this books breaks it all down for you.Definitely worth checking out.
I've been looking at this book for the past month. I love to cook and this book would be a perfect book to own. You name it and it's in there. There are many food items that I have never heard of that have simple substitutions.
This is a must have for every kitchen. It contains the substitutions for over 6,500 ingredients, equipment, and techniques. It also ranks the substitutions so that the highest rated will taste most like the original ingredient.
Great book for those who cook and can't find that one random ingredient in a recipe. Missing one star because a lot of times you can replace sour cream for low fat or reduced fat sour cream really?
I say "read" but that's really pretty impossible. This book is stunning and amazingly clear providing substitutions for ingredients I have never heard of before. Certain to provide for years and years to come.
Useful for a chef, but for a home cook, there's not much here that a quick Google search wouldn't tell you.
Very handy kitchen reference.
A must have book that is good from professionals chefs down to the home cook.
This was added to my kitchen cookbook collection and is a permanent part of that small group of books :)

I really enjoyed it, enough to buy a copy. Thank you
A great resource and something I wish I could have come up with!
An excellent reference and helpful book to pull out when you just aren't sure of an ingredient swap. I have had this book for several years aand am curious to the updates in the new one.
This is a really great kitchen tool but I found it just as easy to look it up on my phone. Technology. :p
This is THE BEST book to have on hand if you like to cook, and sometimes fall into the trap of not having a specific ingredient. I have used this countless times, and been pleased with the outcome!
