Quite disappointing. While the book is huge and encompasses a lot of ingredients and absurdly rare foodie/gourmet concerns -- who knew you could substitute rambutans for leechee nuts in an emergency? -- it does not even touch on super-common situations, like how to make your dinner taste like something when the kids will absolutely not eat onions, or what to use instead of milk or cream when a diner is allergic to dairy. Well, no I haven't actually read it cover to cover. it is a reference book more than a reading book after all.I have browsed, sampled it, and delved into it so much that it is quickly approaching the status of good friend however. An excellent comprehensive reference that would be an especially good help when cooking from older recipes that have outdated ingredients. Many of the suggestions were common sense replacements, so this might be a better reference for a novice cook. I had to laugh at some of the entries though - it seemed the substitution was more obscure than the ingredient it could replace I guess it's good to be thorough.

A few weeks ago I had never heard of The Food Substitutions Bible now that I have I'm a) disappointed I had to return my copy to the library and b) wondering how I survived life in the kitchen before then.This book is so clever and so useful. Just about an ingredient you can think of has an alternate and this books breaks it all down for you.Definitely worth checking out.

I've been looking at this book for the past month. I love to cook and this book would be a perfect book to own. You name it and it's in there. There are many food items that I have never heard of that have simple substitutions.

This is a must have for every kitchen. It contains the substitutions for over 6,500 ingredients, equipment, and techniques. It also ranks the substitutions so that the highest rated will taste most like the original ingredient.

Great book for those who cook and can't find that one random ingredient in a recipe. Missing one star because a lot of times you can replace sour cream for low fat or reduced fat sour cream really?

I say "read" but that's really pretty impossible. This book is stunning and amazingly clear providing substitutions for ingredients I have never heard of before. Certain to provide for years and years to come.

Useful for a chef, but for a home cook, there's not much here that a quick Google search wouldn't tell you.

Very handy kitchen reference.

A must have book that is good from professionals chefs down to the home cook.

This was added to my kitchen cookbook collection and is a permanent part of that small group of books :)

An excellent reference and helpful book to pull out when you just aren't sure of an ingredient swap. I have had this book for several years aand am curious to the updates in the new one.

This is a really great kitchen tool but I found it just as easy to look it up on my phone. Technology. :p

This is THE BEST book to have on hand if you like to cook, and sometimes fall into the trap of not having a specific ingredient. I have used this countless times, and been pleased with the outcome!
